Arroz con Coco (Coconut rice)

Last Sunday we had quite the Dominican cultural experience. Our Spanish tutor, Nelly (yes, like the rapper), invited us to his house to learn how to make coconut rice. His wife was so sweet to teach and cook us an awesome meal. Coconut rice is very time consuming to make but totally worth it! It is very special when Nelly's wife makes it because it's hard work. So glad they invited us to share with them!
First step: (after cracking open the coconut by throwing it on the ground as hard as you can) remove the coconut "meat" from the shell using a very sharp knife. (It's a lot harder than you'd think) 
COCONUT!! 
Second step: Grate the coconut 
Third: Add some water (how much? I have no idea) 
  
Fourth: Squeeze the water out of the coconut shavings reserving the "milk" 
Fifth: Throw some sea salt and oil into a large pan, add the coconut milk. Once the milk is boiling add the rice and cover for about 30-40 minutes. 
Viola! Coconut rice, beef and peppers, and avocados. Absolute deliciousness!

We really enjoyed this time with Nelly and his wife learning about Dominican culture and hanging out with their family. Dominicans are very friendly, hospitable people. We left their house exhausted and with full bellies!
